bacon, egg & cheese roll ups.

recipe time! This past week I decided to try something new for breakfast for my sweet hubby. If any of you know him... He loves breakfast. So I knew I had to come up with something. These breakfast roll ups were so easy! And might a say a big huge hit with the boss. And I really had so much fun making them.

Ingredients:

2 packages of 8 count croissant rolls.
Bacon bits or pieces.
Cheese
7 eggs cooked and scrambled.

Directions:

Unroll croissants onto large ungreased cookie sheet.
Place a spoonful of scrambled eggs, a couple of pieces of bacon and a little bit of shredded cheese onto the bigger side of the unrolled croissant.

(I like these bacon peices because I don't have to cook actual bacon and it's 1/2 the fat!)

Roll up each croissant starting at the wide end and ending at the narrow end of the croissant.

Bake at 375 degrees for 11-13 minutes or until croissants are light golden brown.

And enjoy :)
